Perennial weeds on Organic farms

A crop that produces a delicious nut-like tuber is being grown near Velencia Spain. Consumers from around the world have ordered this heathly snack food product that boasts a nutritional profile superior to olive oil. In North America this plant is considered a horrific perennial weed called Yellow nutsedge.
In organic production systems, a fundamental knowledge of weed identification and biology provides the foundation to pose the question: "Is this plant friend or foe"? If it is beneficial, how do I integrate this into my cropping system? If it negatively affects my organic crops, how do I minimize its impact?
